Chicken Taco Chili Recipe

I found this recipe on tablefortwoblog.com and thought I'd just share the love...cause this recipe is delicious! This recipe is super easy and will feed up to 10 people! It's a low-calorie dinner as well... 200 calories per serving (of 10oz) which is surprisingly filling for such a low-calorie meal. 



Below are the items you will need:

1 chopped onion (I used white)
1 can of black beans
1 can of kidney beans
16 oz of tomato sauce
1 can of corn
16 oz of diced tomatoes with green chilies
1 packet of taco seasoning
1 tbsp of ground cumin
1 tbsp of chili powder
3-4 chicken breasts (I guesstimated about 2 pounds of chicken)




In a mixing bowl, put all the ingredients together (except the chicken) til it's all nice and mixed up. 
I did my prep work the night before and then it was just as simple as throwing it into the crockpot at 6:30 in the morning and walking away for 10 hours -- or on high for 4 hours. 


After everything is mixed, it's time to put it all in the crockpot. Make sure the chicken is totally covered. I poured some of the mix on the bottom, then a couple breasts of chicken, then more of the mix, then more chicken then topped it all off with the rest of the mix. Be sure the chicken is completely covered or it may get dry.



After it's all set, turn the crockpot on. Use either HIGH for 6 hours, or LOW for 10 hours. Shread the chicken with two forks and then let it settle in the chili for 30 minutes before serving.


Then tah-dah!!! Leftovers will be good for 7 days.
